Cappadocia's rock is volcanic tuff — ash from eruptions millions of years ago, compacted into a stone soft enough to cut with hand tools and hard enough to hold a ceiling. People have been carving into it since at least the Bronze Age: houses, churches, stables, pigeon lofts, and underground cities going down eight levels that held thousands of people during raids.

A cave hotel here is usually a genuine article. The good ones are restored village houses whose back rooms are carved chambers, often several centuries old, with the newer stone frontage built on. They stay at a steady temperature year round, they are very quiet, and some have no windows at all.

The balloons, and the thing to plan around

Around a hundred balloons lift at dawn on a good day and it is the reason most people come.

Flights are cancelled for wind, cloud and rain, and the civil aviation authority makes that call each morning. In winter a substantial share of mornings are grounded. In summer the cancellation rate is much lower but not zero.

The planning consequence is simple and almost nobody acts on it: book your flight for the first morning of your stay, not the last. If it is cancelled you have the remaining mornings to try again. Book it for the last morning and a single weather call ends the trip's main event.

Operators rebook or refund cancellations, and the good ones will tell you the night before.

The villages

Cappadocia is not a town. It is a group of villages across a valley system, and they differ.

Göreme is the centre: the most hotels, the most restaurants, the open-air museum with its painted rock churches, and the balloons launching from the fields around it.

Uçhisar, on the high ground, has a castle carved into a rock outcrop and the best views across the valleys. It is quieter and generally more expensive.

Ürgüp, east, is a larger working town with the most substantial restored mansions and less of a visitor feel.

Ortahisar and the outlying villages are quieter again and require a car.

Uçhisar

Quieter, and you need a car.

Grand Cave Suites occupies a restored Byzantine monastic complex in the village of Ayvalı, with rooms in the original carved chambers.

What we have left off

The smaller pensions across Göreme are excluded, and many of them are also genuine cave rooms at a fraction of the price. They are guest houses rather than hotels.

What to do

Book the balloon for your first morning. That is the single most useful thing in this article.

Walk the valleys. Rose Valley and Red Valley at sunset, the Love Valley for the rock formations, and the Ihlara valley further south, which is a gorge with rock churches along a river.

See the Göreme Open Air Museum, a monastic complex of churches carved into rock with Byzantine frescoes from the tenth and eleventh centuries. Go at opening.

Go underground at Derinkuyu or Kaymaklı, cities carved eight levels down with ventilation shafts, wells and rolling stone doors. Not for anyone claustrophobic.

Eat testi kebab, cooked and served in a sealed clay pot that is broken open at the table, and drink the local wine, which is better than its reputation.

Practical notes

Kayseri and Nevşehir both have airports with domestic connections from Istanbul, roughly an hour from the villages.

April, May, September and October are ideal. Summer is very hot and busy. Winter is cold, often snowy, and the valleys under snow are remarkable — but it is also when balloon cancellations peak.

Cappadocia sits at around 1,000 metres and the nights are cold in every season.
